This one is definately not low-cal , but every once in a while I have to
indulge!
2 chicken breasts, skinned, boned and flattened with a mallet.
1/2 bunch fresh spinach
1/2 cup mayonaise
1/2 cup feta cheese, cumbled
4 slices of lean bacon (I prefer the kind you get from the butcher rather
than supermarket for this recipe)
mix together spinach (cleaned and dried ) mayo and feta and place a
spoonful on center of each chicken breast. very carefully roll up the
chicken so that nothing leaks out, then, starting at one end wrap with
bacon strips. i usually use 2 per breast but it depends on size. when the
bacon is wrapped tightly around the chicken you can use toothpicks to hold
in place. bake at 350 f until bacon is crispy.
remove from oven and slice into medallions , it looks very nice on the
plate this way. enjoy!
